    Dark amber in color, Angel’s Envy Cask Strength is significantly darker than the
    standard release. It’s clear that the spirit has spent much more time in the port
    finishing barrel and it’s taken on some of the dark tones from that barrel. The port finish is also clearly there on the nose which combines the lush port note with oak spice, clove, marzipan, and vanilla. The entry is extraordinarily approachable for a high proof spirit, with soft fruit and vanilla leading the charge with a gradual transition to oak spice in the midpalate. Things do get spicy and slightly fiery towards the end of the midpalate with solid oak, black pepper, and clove stepping out in front of the more lush sweet notes. The spirit does manage to maintain some
    balance between the strong spice and the sweet undertones, but that
    balance is elusive as the flavors exit quickly in a very dry finish.

    Basil Hayden’s is famous for being “lighter” in style (though just 80 proof, it’s still in barrels for eight years), and that’s obvious from the first sip. It’s easily drinkable straight, but improves a bit with a splash of water. That’s a difficult trick, actually, because Basil Hayden’s is one of the best widely-available bourbons on the market, if not the best mainstream brand you can buy at any liquor store around.

    Where to begin? Start with the smoothness. Hayden goes down gently,
    immediately filling your mouth with its sweet honey, vanilla, and gentle smoke character. There’s an interesting mintiness, too — don’t worry, you’ll pick up on it on your second glass.

    Berkshire Mountain Distillers may sound like a solidly English company, but they definitely are not. Situated in Great Barrington, Massachusetts, they produce many different spirits, including Whisky, Rum, Gin and Vodka. Established in 2007, they are well on the way to becoming a very big name in the American Whisky business. This is the first legal distillery to exist in this area since prohibition. The company pride themselves on their artisanal title as well as their support of local agriculture and business.

    Berkshire Bourbon is a young Whisky made from corn sourced only two miles away from the distillery. It is aged in new fill American Oak casks and carries the sweetness of the wood from nose to finish.

    “The Original Single Barrel Bourbon”. You’ll know it by the little horse and rider on the stopper and the grenade-shaped bottle. How’s it taste? Quite good. An odd 93 proof, the bourbon goes down smoother than you’d think when served neat, but a splash of water brings out the honey, caramel, and burnt sugar notes to an even more obvious level. You’d be fine using Blanton’s as a sipping whiskey or in a mostly-whiskey cocktail like a Manhattan. Just avoid blending it too much with strong aromatics or liqueurs or you’ll lose the delicate character.

    Booker’s Bourbon is touted as “the highest grade bourbon made by” master distiller Booker Noe at Jim Beam — hence the name “Booker’s.” Noe died in 2004, but his spirit clearly lives on. 
    The Bourbon is hot. Though the bottle tag suggests drinking it neat and uncut, this is folly. A healthy splash of water helps Booker’s show beyond the burn. Wood is the primary character here, hefty, chunky, and powerful like a lumberyard. It’s big on the nose and the body, and it takes a good amount of time sipping and savoring for this to fade. Eventually you dig out Booker’s finer nuances. Vanilla and dark chocolate — almost a Mexican chocolate with touches of
    cinnamon — which rise up on the finish as you finish your first glass. Some fruitiness here — plums, raisins — is in the mix as well.

    An honest, old-school, rough-around-the-edges bourbon with a real kick. It’s a 90 proof gut-puncher (crafted from a 175-year-old recipe) that gives off the flavor of its charred oak barrels more than anything else: Bulleit spends six years-plus in those barrels, making it a woody and smoky quaff, but a smooth one if tempered a touch with water.
    Bulleit makes for a great blending whiskey with strong mixers like Coke, but it is less exciting when served neat. The smoke is somewhat overpowering, making it hard to pick up much complexity. But if you like that heavy smoke-’n’-oak flavor, this is your concoction.

    “Beige label” Bulleit 10 is not particularly dark in color, a classic medium orange/brown. The nose is also not particularly revealing, a classic vanilla and wood character with some spice behind it. The body has more of the same. As you sip, it’s unexpectedly heavy on the wood, but a rack of baker’s spices come along behind that to balance things out for the most part. Overall, it’s a solid whiskey, though it doesn’t come across as particularly old or particularly unique, with the exception of the ample amount of wood throughout, revealing itself especially strongly on the finish.

The proof ranges from 118-125. The company has not announced if they plan to expand distribution outside Kentucky.

    The term “Angel’s Share” is a common term to describe the amount of spirit lost to evaporation during the aging process in a barrel. Jim Beam has cleverly coined the term “Devil’s Cut” to describe whiskey which has soaked and become trapped into the barrel and is typically not used in the production of whiskey. This trapped whiskey is what makes bourbon barrels so attractive for use in aging other spirits, like scotch whisky, tequila and rum. For their new Jim Beam Devil’s Cut Bourbon, Jim Beam has extracted this trapped whiskey using a proprietary process with steam and water and then blended that extracted whiskey with some of their regular aged bourbon.

    The extracted bourbon carries with it a tremendous amount of tannins and color from the barrel, giving this whisky a deep, dark color. The nose is clearly dominated by strong oak tones with clear cinnamon spice and an undertone of vanilla and caramel. It’s a bold and spicy nose, much more aggressive than the tradition Jim Beam. The entry is very oak forward as the oak notes explode on the palate. Things ease a bit by the mid palate and more of the vanilla and caramel notes find their way from underneath the bold oak. There are some slight cinnamon spice notes present but they do battle with the oak and ultimately get lost. The finish is fairly long and dry with the oak notes really lingering.

    Beer Barrel Bourbon (no mashbill provided) is first aged in new oak for “several” years at a relatively low 110-115 proof. It’s then finished for 90 days in barrels that were used for the company’s Dragon’s Milk stout — which, in turn, was itself aged in a former Bourbon barrel. The cycle is endless!

    It’s young, corny Bourbon to be sure. The nose is heavy with grain, somewhat hot with smoky campfire notes and — curiously — a toasted marshmallow character at times. There’s continued grain on the palate, but the body has a unique texture to it. New Holland calls it “biscuity” but it’s more like a foaminess or frothiness to me — imagine the head on that pint of stout and you have a sense of it.

    As it opens up in the glass, this whiskey begins to burn off some of its grain character and exhibit more of the sweetness we expect from Bourbon. Here it takes on a butterscotch character, with some burnt toast and allspice along for the ride. Really interesting stuff, but it might take you a minute to get over the unique mouthfeel.

    This wonderful bourbon is bottled as close to barrel proof as possible. They add just a splash of Kentucky limestone well-water when they empty the barrels for bottling. Thus, this whiskey is as smooth as any you will find. The more water you add to whiskey from its natural barrel proof to its bottle proof, the harsher it becomes. This 107 barrel proof seems to be just right.

    A very well crafted whiskey. Sip it at room temperature with a little spring water or over ice.

    1792 (a reference to the year that Kentucky became a state) comes from the Barton Distilling Company, which ages this small batch whiskey for 8 years before releasing it as a 93.7 proof finished product.

    That product is ready-made for any sweet tooth: 1792 is one of the most sugary, dessert-friendly bourbons there is. If they were sipping whiskey like this in the 1700s, it’s a miracle we ever made it through the Industrial Revolution.

    That sweetness overwhelms everything: The nose speaks of honey and molasses, the body is brown sugar all the way, more molasses, nuts, and toasted wood character. To call 1792 simplistic would be incorrect: It knows what it wants to be and goes full-tilt for it, right for the throat. There are other bourbons that are more nuanced, complicated, and interesting, but I’d point to 1792 first for the after-dinner crowd.

    At 90 proof, the bourbon is improved with a little water, but still it lacks uniqueness. Part of the Wild Turkey family, it shares some of its DNA with its pappy, also displaying distinct apple notes.

    With Jack Daniel’s and Jim Beam, Wild Turkey stands as one of the pinnacles of mass market whiskies. Of course, Wild Turkey has a far more dangerous reputation, owing to its 101 proof status… it’s right there in the name of the product!

    Wild Turkey is a surprisingly tame spirit for something with “Wild” in the name. It’s textbook bourbon, with a very light vanilla character and a touch of smoke. Served straight, it’s pure firewater, hard on the palate. With a little water, it’s a little more charming, but there’s no backbone to it, and the spirit comes off as a little thin, with a surprising and strong apple/apple juice flavor.

    Wild Turkey 101 is a good complement for fruit-based cocktail recipes, as the apple component works will with other fruit flavors. Or try it in a Manhattan. Extra cherries.

    Well known for their 101 proof bourbon, the folks from Wild Turkey apparently wanted to confuse the hell out consumers even further with another 80-something proof bourbon in their namesake whiskey lineup. Let’s try to get this straightened out. The Wild Turkey Bourbon line has the classic 101. They also have an 80 proof. Did the new Wild Turkey 81 take the place of the 80? Not exactly.

    The 80 proof whiskey still exists. The 81 proof bourbon came about because Wild Turkey wanted to offer consumers a bolder, spicier bourbon than the 80 proof, yet one that was not quite as full flavored as the 101. Like Goldilocks it appears they were going for “just right”. In order to accomplish this, 81 is made from barrels between 6-8 years old that have a bolder flavor profile than the original 80.

    Wild Turkey American Honey 35.5% ABV

    A bourbon must be at least 80 proof in the bottle to be called a bourbon, and it must not be mixed with any flavorings or foreign substances not associated with classic bourbon distilling. However, because its brothers and sisters are bourbons, we put Wild Turkey American Honey in the bourbon category.

    At 71 proof, you get an idea going in how much honey is in the blend, and overall it’s a success. The honey isn’t overpowering but you can still get a good taste of it, and it’s not too viscous and sweet, a common complaint with Drambuie.

    Mind you, it’s still a honey-sweet experience, though the nose doesn’t really suggest such. There are some flowery herbs (lavender?) in the finish, but it’s a real hunt to find them. There could be all manner of dessert drinks coming out of this spirit, but it was just fine consumed straight… just leave a good gap between your dram and dinner. It really blows out the palate if you’re planning on having something savory later on.

    Rare Breed is a “barrel-proof bourbon,” meaning it is bottled directly from a variety of barrels at the proof it reaches in those barrels, with no added water to lower the proof or dilute the flavor.

    This bourbon is a unique marriage of Wild Turkey 6-, 8- and 12-year-old stocks, which give the whiskey a rich, exceptional flavor that is remarkably smooth, considering its high alcohol content. It is assertive with hints of light oranges, mint, and tones of sweet tobacco that will remind you of your grandfather’s pipe-bowl. The finish is long, warm and nutty and lingers in the mouth with hints of hot peppers and well-toasted whole wheat bread.

    Aged: 6 years

    On the nose: Cigar-boxes and a hint of charcoal. The taste is very firm. Full of flowers, lightly combined. Whole almonds. Marzipan. The finish is very long. Flowery. Violets.
    Perhaps encouraged by the dark-orange colour, the descriptors sound sweet, but the overall effect is one of pithy dryness, with great finesse.

    Woodford Reserve Double Oaked 45.2% ABV

    Type: Kentucky Straight Bourbon Whiskey

    Woodford Reserve Double Oaked uses a special finishing barrel. The process is also different. Before being placed into a finishing barrel, Woodford Reserve is proofed back down to 110 proof (the same proof level that it goes into the barrel at the beginning of its agin process) and then put into a special finishing barrel and re-aged for an additional six months to a year (depending on the barrel). The whiskey is then proofed down to 90.4 proof and bottled.

    The key to Woodford Reserve Double Oaked is, of course, this second aging barrel. The finishing barrel is made out of new oak and has has had an “extreme toast” which is at least twice as long as the standard toast that Woodford traditionally does with their barrels. The barrel is then flash charred (literally 5 seconds), the lightest char possible. The inspiration for this product came from the Woodford Reserve Master Collection Seasoned Oak Finish and the impact that a different style of finishing barrel could have on a whiskey.

    Type: Kentucky Straight Bourbon Whiskey

    As the name implies, Four Wood is a Bourbon with a unique finishing program. Standard Bourbon, finished in newly charred American oak, is finished in one of three different types of barrels: maple, Sherry wood, and Port wood. (Woodford has experimented with maple in a past Master’s Collection.) The three barrel-finished whiskeys are batched together — the ratio is undisclosed, as are the ages of these whiskeys — and bottled as Four Wood.

    The nose offers that big wood rush that’s classic Woodford, lots of lumberyard character that masks what you’re about to get into. On the tongue, it’s woody as expected, but surprisingly sweet. Chocolate notes are prevalent, plus lots of fresh red/black fruit — the Port finish overpowers everything with black cherry and raisin notes. Sip this whiskey long enough and orange elements, driven by the sherry finish, come along as well. That’s a good thing, but it does give Four Wood a bit of a fruit salad feeling, with a whole lot going on in the fruit department and not enough spice to back it up.
