    Dark amber in color, Angel’s Envy Cask Strength is significantly darker than the
    standard release. It’s clear that the spirit has spent much more time in the port
    finishing barrel and it’s taken on some of the dark tones from that barrel. The port finish is also clearly there on the nose which combines the lush port note with oak spice, clove, marzipan, and vanilla. The entry is extraordinarily approachable for a high proof spirit, with soft fruit and vanilla leading the charge with a gradual transition to oak spice in the midpalate. Things do get spicy and slightly fiery towards the end of the midpalate with solid oak, black pepper, and clove stepping out in front of the more lush sweet notes. The spirit does manage to maintain some
    balance between the strong spice and the sweet undertones, but that
    balance is elusive as the flavors exit quickly in a very dry finish.

    Genuine symbol of the Distillery’s values, this Armorik highlights both the quality of its know-how and its attachment to the Breton land. In partnership with a local cooper, the Distillery designed unique Brittany oak casks. Armorik Double Maturation remains in them for many long years before being transferred into Oloroso sherry casks for a second maturation. Reduced to 46% and non-chill filtered, it pleases through its richness and elegance.
    Nose: Fruity and elegant, it has wonderful citrus and apple notes, highlighted by salted butter caramel fragrance.
    Palate: Fine woody notes rapidly changed on to cereal ones, all with an unsuspected fullness.
    Finish: Touches of heather honey perfume, the finish in the mouth is sustained by the cereals and pleasant marine notes.

    Brainchild of Baker Beam, the grandnephew of Jim Beam himself, this bourbon recipe involves a special yeast in the fermentation process that is proprietary to Baker’s. Beam suggests Baker’s is a Bourbon for Cognac enthusiasts. There is lovely sweetness here, plenty of vanilla but also rich chocolate pudding, nutmeg, and fruitcake character.

    An impeccably balanced spirit rested to maturity for 8 years in new American oak. Aged low in the rick house for a rounder, mellower profile that marries fruit and buttery notes with the spice and comfort of charred oak. Hand churned buttercream and freshly dipped pralines in the nose invite deeper notes of baked peach cobbler and pan toasted chestnuts. The 122.9 proof heat dissipates quickly into savory bursts of brown butter dipped cornbread lathered in stone fruit preserves. Elongated notes of still steaming cinnamon toast lightly dusted with raw sugar. Brightly aromatic tangerine and blood orange beckon with each sip eventually leading to a lengthy caramel coated popcorn finish.

    Often, barrels and batches of bourbon are used as components of larger blends. Watered down, pulled too early, left too long, they forgo their singular characteristics. The makers at Barrel Bourbon enjoy finding and identifying barrels that contain distinctive bourbons and then bottling them at cask strength to retain their authentic qualities.     This first edition of Barrel Raider is a seven-year-old bourbon with a mashbill of 70% sweet corn, a whopping 22% winter rye and 8% sprouted barley. Owing to its high-rye content, Barrel Raider straight bourbon whiskey is spicy and peppery with a pipe tobacco aroma, and it possesses a nearly endless finish.

    Basil Hayden’s is famous for being “lighter” in style (though just 80 proof, it’s still in barrels for eight years), and that’s obvious from the first sip. It’s easily drinkable straight, but improves a bit with a splash of water. That’s a difficult trick, actually, because Basil Hayden’s is one of the best widely-available bourbons on the market, if not the best mainstream brand you can buy at any liquor store around.

    Where to begin? Start with the smoothness. Hayden goes down gently,
    immediately filling your mouth with its sweet honey, vanilla, and gentle smoke character. There’s an interesting mintiness, too — don’t worry, you’ll pick up on it on your second glass.

Situated in Great Barrington, Massachusetts, they produce many different spirits, including Whisky, Rum, Gin and Vodka. Established in 2007, they are well on the way to becoming a very big name in the American Whisky business. This is the first legal distillery to exist in this area since prohibition. The company pride themselves on their artisanal title as well as their support of local agriculture and business.

    Berkshire Bourbon is a young Whisky made from corn sourced only two miles away from the distillery. It is aged in new fill American Oak casks and carries the sweetness of the wood from nose to finish.

You’d be fine using Blanton’s as a sipping whiskey or in a mostly-whiskey cocktail like a Manhattan. Just avoid blending it too much with strong aromatics or liqueurs or you’ll lose the delicate character.

    Booker’s Bourbon is touted as “the highest grade bourbon made by” master distiller Booker Noe at Jim Beam — hence the name “Booker’s.” Noe died in 2004, but his spirit clearly lives on. 
    The Bourbon is hot. Though the bottle tag suggests drinking it neat and uncut, this is folly. A healthy splash of water helps Booker’s show beyond the burn. Wood is the primary character here, hefty, chunky, and powerful like a lumberyard. It’s big on the nose and the body, and it takes a good amount of time sipping and savoring for this to fade. Eventually you dig out Booker’s finer nuances. Vanilla and dark chocolate — almost a Mexican chocolate with touches of
    cinnamon — which rise up on the finish as you finish your first glass. Some fruitiness here — plums, raisins — is in the mix as well.

    An honest, old-school, rough-around-the-edges bourbon with a real kick. It’s a 90 proof gut-puncher (crafted from a 175-year-old recipe) that gives off the flavor of its charred oak barrels more than anything else: Bulleit spends six years-plus in those barrels, making it a woody and smoky quaff, but a smooth one if tempered a touch with water.
    Bulleit makes for a great blending whiskey with strong mixers like Coke, but it is less exciting when served neat. The smoke is somewhat overpowering, making it hard to pick up much complexity. But if you like that heavy smoke-’n’-oak flavor, this is your concoction.

    “Beige label” Bulleit 10 is not particularly dark in color, a classic medium orange/brown. The nose is also not particularly revealing, a classic vanilla and wood character with some spice behind it. The body has more of the same. As you sip, it’s unexpectedly heavy on the wood, but a rack of baker’s spices come along behind that to balance things out for the most part. Overall, it’s a solid whiskey, though it doesn’t come across as particularly old or particularly unique, with the exception of the ample amount of wood throughout, revealing itself especially strongly on the finish.

    Taste: Enters sweet and buttery, goes to a mild zesty citrus character and the swallow is a prevalence of “smokiness” reminiscent of a Scotch. The acidic nature plays against the smoke in a strange fashion at first, but after more sips becomes an interesting journey.
    This kind of smoke is rather unexpected flavor coming out of a Bourbon and delivers the the depth of the barrel in a fashion that we don’t taste often.

    Part of the Buffalo Trace empire, Eagle Rare is a 10 year old Bourbon with plenty to recommend. A classically structured Bourbon, it is sweet without being cloying, and there’s barely a trace of its corn heritage here, most of which you catch on the nose. What remains is an intense dessert-like caramel character, touched with vanilla and cocoa notes, and a long, smooth finish. The balance is just about perfect here: Racy at 90 proof but not too hot. Outstanding value. Can be found for as low as $20 a bottle, which is almost insane for a 10 year old Bourbon.

    WA‘s praise is hard to argue with. With Elijah Craig 20 Year, you get a Bourbon full of flavor: the typical vanilla, wood oil, peaches, and a distinct raisin character. Plenty of wood here, as you’d expect with a whiskey this old, but it’s balanced by all these other components. Later on, you get more of a fruitcake character from the whiskey, those raisins taking on cinnamon and nutmeg notes, with a candied finish. The wood’s on the nose, the fruit bats clean-up. Lovely lovely lovely.

Carried completely across the palate is a wonderful splash of orange, which even at 99 proof is close to delicate……… very interesting stuff, this bourbon.

    George Dickel Cascade Hollow was introduced in 2007 as a stopgap to help alleviate the shortage of George Dickel 8 that started to happen around late 2006. This shortage was largely a result of the distillery being shut down from 1999-2003 due to a combination of supply exceeding demand and a wastewater issue. Though it wasn’t just the closure that created the shortage 3-4 years after it started up it’s production again, it was the surge in popularity.

    In the early 2000’s, after the distillery went back online, Diageo started actively marketing George Dickel once again and a corner stone of that marketing was the newly introduced George Dickel No. 12 which consists of whisky that is almost double the age of the whiskey in the No. 8. The lack of back stock from being shut down for 4 years, plus renewed interest, plus the introduction of a new product which relied on that same back stock caused the GD 8 supply to dwindle and gave birth to the Cascade Hollow which was produced until 2012.

    Corn still dominates here as well but it, like all the other notes, comes across light and airy. What are those other notes you ask? Well caramel, orchard fruit, maple, toffee, spice and a light vanilla are what I’m picking up but it’s all light except for the corn which is very prominent.

    Considered the “Foundation Recipe”, George Dickel No. 1 is the same mashbill that George Dickel uses for most of their aged whiskies (except for George Dickel Rye). George Dickel’s mashbill is high enough in corn (84% Corn, 8% Rye and 8% Barley) that the unaged version of their whiskey qualifies as a Corn Whiskey (which must have at least 80% corn in the mix). George Dickel No. 1 also goes through a similar Tennessee Whiskey “mellowing” process as their other offerings by filtering the spirit through sugar maple charcoal. With George Dickel No. 1 the spirit is chilled first before filtering which helps strips a greater amount of the heavier oils in the spirit.

    The nose is clean, but packs a ton of grain – you get the popcorn first, then a Sugar Smacks cereal rush, with a toasty malt depth in the background and an elusive bit of green corn silk and husk. It’s actually quite nice, though a far departure from the sweet heat that this will turn to after years in a barrel.

    It’s a big winner: Scorching hot and dense with spicy rye character, demanding a healthy splash of water to coax out its charms. When you do, they are abundant: Caramel and vanilla in harmony with classic rye charms, with a finish that offers both a cinnamon punch and a soothing sweetness to take you out. It begs for repeat sips and, should you polish off the bottle, well, another one is barely 20 bucks away.

He soon adapted his techniques to the local Kentucky grains, particularly corn, and began producing what became known as Kentucky’s Finest Table Whiskey.     WHY?
    The flamed bourbon cask initially adds a sweeter vanilla and caramel flavour, followed by the charred dark Rum cask which adds a sweet spicy rum character to the final expression.
    WORTH IT
    Premium dark Caribbean Rum casks are hard to find and are far more expensive to import all the way from the Caribbean to Ireland, but in our view they are worth it for the rich fuller character they add to our final HYDE Single Malt whiskey. – HYDE

    Our Bourbon casks are charred for up to a minute by the cooper before being filled with the triple distilled Single Grain Irish Whiskey ‘new fill’ spirit. We flame char our Single Grain casks to what is described as a ‘heavy alligator char level 5’ to create an open cracked carbon layer on the inside of the cask. This high temperature flame charring process caramelises the oak wood sugars on the inside of the cask leaving vanillins, lactones, and tannins to influence the whiskey’s final flavour over the 6 long years of maturation. – HYDE

    Jack Daniel’s created their “first new grain bill in 100 years” for the creation of their rye whiskey. The Single Barrel Rye is the company’s third rye release. The whiskey is aged in the upper regions of their barrel house where it’s exposed to the increased temperature variation. The Single Barrel Rye is at least 4 years old based on the lack of age statement on its label, although the company hasn’t officially called it as such.

    Nose
    A welcoming array of cherry and banana, offset by bouts of custard, oak, and faint rye spice. A dash of ethanol is present but doesn’t sabotage an otherwise nice experience. Enjoyable, and surprisingly tame in intensity, what’s definitely notable is the restraint and overall gentleness this young whiskey is sporting. This isn’t a typical bombastic rye whiskey nose, for better or for worse.

    ​Palate
    It tastes a bit simple at first. A heavy dose of banana is upfront that’s followed by caramel and cherry. The palate never quite fully develops into an array of flavors. Instead, the highlight here is its very enjoyable buttery mouthfeel that simply settles on a baked plantain, oak, and rye spice blend that’s straightforward and satisfying. Slightly reminiscent of Jack Daniel’s No 7 flavors and characteristics the whiskey is known for, but still its own beast.

    ​Finish
    There’s a noticeable ethanol bite on the finish that’s saddled with rye spice and oak. Lasting notes of cinnamon and vanilla ride out this medium length finish. It’s on the dry side and easily the whiskey’s weakest link.

    The term “Angel’s Share” is a common term to describe the amount of spirit lost to evaporation during the aging process in a barrel. Jim Beam has cleverly coined the term “Devil’s Cut” to describe whiskey which has soaked and become trapped into the barrel and is typically not used in the production of whiskey. This trapped whiskey is what makes bourbon barrels so attractive for use in aging other spirits, like scotch whisky, tequila and rum. For their new Jim Beam Devil’s Cut Bourbon, Jim Beam has extracted this trapped whiskey using a proprietary process with steam and water and then blended that extracted whiskey with some of their regular aged bourbon.

    The extracted bourbon carries with it a tremendous amount of tannins and color from the barrel, giving this whisky a deep, dark color. The nose is clearly dominated by strong oak tones with clear cinnamon spice and an undertone of vanilla and caramel. It’s a bold and spicy nose, much more aggressive than the tradition Jim Beam. The entry is very oak forward as the oak notes explode on the palate. Things ease a bit by the mid palate and more of the vanilla and caramel notes find their way from underneath the bold oak. There are some slight cinnamon spice notes present but they do battle with the oak and ultimately get lost. The finish is fairly long and dry with the oak notes really lingering.

    On the nose: Some corn, and a bit of vaporous heat. Underneath, sugar, orange peel,and cherries. There’s also some Irish whiskey-like banana character in the mid-palate, with a corn chip kicker on the finish. Stetson comes across as young Bourbon, but one with a bit of pedigree. Both the rye and wheat character come through, which is quite a delight.

    This is both richer and more complex than the standard twelve year old Knappogue Castle. Named ‘Twin Wood’ because both Bourbon and Sherry cask types have been used for the maturation. It seems that the sherry casks have added to the body and depth and also brought some spice and dried fruit flavours. Like most of the current Knappogue Castle whiskeys this was made using unpeated, triple distilled single malt whiskey from a Northern Irish distillery. Limited numbers were made of this whiskey and it is bottled un-chilfiltered and at 46%.

    The nose is harsh at a remarkable 60% ABV for a non-uncut/unfiltered (AKA cut/filtered) whiskey. Once past that, it does pretty well with a lot of corn being picked up. A lot of oak here, too.

    The taste is surprisingly smooth, and will clear your sinuses right up! Again, be aware that this is a bourbon bottled at 120 proof. The oak is still there and is the most dominating taste in this bourbon.
    The finish is long and spicy, leaving your tongue tingling for a bit.

    KOVAL Distillery’s organic, single barrel bourbon has the requisite mash bill of at least 51% corn, but instead of the usual rye or wheat supplement, they have included one of the main cereals of Asia and Africa. Millet is a gluten-free ancient sustenance grain, and like corn, has a history of working in the spirits industry, albeit in Nepal, where it has long been celebrated as a libation of choice.

    Tucked away in a charred new American oak barrel to age, millet and corn learn to complement each other, neither taking the lead. Out of the bottle, this duet opens with notes of mango chutney, while the millet renders a soft whisper of vanilla throughout. Then harmonizing, the grains sing with the sweetness of apricot custard. This pair finishes with peppery caramel, a diminuendo into a wisp of clove-spiked tobacco lingering on the tongue.

    Larceny is the heir to the wheated Bourbons that make up the historic Old Fitzgerald franchise that Heaven Hill acquired in 1999. In fact, it is the somewhat controversial history of John E. Fitzgerald and his eponymous Bourbon brand that provides the story, and name, to Larceny Bourbon.

    Larceny Bourbon continues the Old Fitzgerald tradition of using wheat in place of rye as the third or “small” grain in the whiskey’s grain recipe, or mashbill as it is commonly known. The use of winter wheat replaces the spicier, fruitier flavor notes that rye provides with a softer, rounder character that is the hallmark of Old Fitzgerald and other “wheated” Bourbons.

    Larceny is a true small batch Bourbon produced from dumps of 100 or fewer barrels that have been selected from Heaven Hill’s open rick warehouses in Nelson County, Kentucky. Larceny is drawn from barrels that have aged from 6 to 12 years at high storage, and is bottled at a full-bodied 92 proof, or 46% alcohol by volume.

    Lock Stock & Barrel Limited Release 13 Year Old Straight Rye Whiskey is crafted in Pennsylvania — the birthplace of rye whiskey — from 100% rye grains. The rye is grown in the Pacific Northwest, where only grains that exhibit the perfect combination of weight, plumpness and rich, earthy fragrance are harvested. After the grains have been milled and mashed, they are fermented before being distilled through a double copper-pot still. Following distillation, the rye is aged in new, charred American oak casks for 13 years before being bottled at nearly barrel proof (101.3 proof).

    As a result of its extra-long maturation, the rye has an aroma of salted caramel, buttered popcorn and toffee.     Beer Barrel Bourbon (no mashbill provided) is first aged in new oak for “several” years at a relatively low 110-115 proof. It’s then finished for 90 days in barrels that were used for the company’s Dragon’s Milk stout — which, in turn, was itself aged in a former Bourbon barrel. The cycle is endless!

    It’s young, corny Bourbon to be sure. The nose is heavy with grain, somewhat hot with smoky campfire notes and — curiously — a toasted marshmallow character at times. There’s continued grain on the palate, but the body has a unique texture to it. New Holland calls it “biscuity” but it’s more like a foaminess or frothiness to me — imagine the head on that pint of stout and you have a sense of it.

    As it opens up in the glass, this whiskey begins to burn off some of its grain character and exhibit more of the sweetness we expect from Bourbon. Here it takes on a butterscotch character, with some burnt toast and allspice along for the ride. Really interesting stuff, but it might take you a minute to get over the unique mouthfeel.

    In 1870 George Garvin Brown created Old Forester on Louisville, KY’s famous whiskey row. In honor of that milestone year in bourbon history, we have crafted a tribute – Old Forester 1870 Original Batch – the first craft expression in the Old Forester Whiskey Row Series.

    Old Forester 1870 Original Batch echoes George Garvin Brown’s original 1870 batching process. Back then, Brown batched barrels obtained from three distilleries to create a consistent flavor profile. To emulate that process today, we also select barrels from three warehouses, each barrel originating from a different day of production, with a different entry proof and a different age profile.

    The three expressions of Old Forester are then batched together to craft Old Forester 1870 Original Batch. This 90-proof bourbon will be minimally filtered, to honor the processes available to George Garvin Brown at that time.

    Some time ago at the historic Stitzel-Weller Distillery, the unthinkable happened. A batch of beautiful 17-year-old Kentucky straight bourbon was accidently mixed with barrels of much younger whiskey. This error turned out better expected as the older bourbon wasn’t marred, but transformed into something surprisingly special.

    Beginning with a nose hinting at apple skin, almond, toffee, raisins and slight milk chocolate, The Gifted Horse has unique tastes of creamy caramel, Bosc pear and fruit cake. This unusual blend’s fruity notes become more apparent with a splash of water.

    Only a small amount of Lost Prophet exists and it will only be released once. After the last bottle has been sold, it’s gone for good, its nomadic journey coming to an end.

    he 2016 edition, the tenth in the series, features two separate versions of the Bottled-in-Bond product, expected to be the oldest Bottled-in-Bond in the world. It was produced in Fall 1990 and Spring 1991 at Heaven Hill’s distillery in Bardstown, KY, (D.S.P. KY-31), which was later destroyed in 1996 by fire along with seven rickhouses and over 90,000 barrels. The liquid is bottled by season in order to retain its Bottled-in-Bond designation.

    Bottled at 100 proof (50% abv) and non-chill filtered, the Bourbon will retain more of the natural esters and fatty acids that have matured in the barrel for almost a quarter of a century, providing a richer mouthfeel. Oak flavor is prominent with hints of cinnamon and vanilla, rounded out by a clean finish with a hint of chocolate.

Haig Pinch was a Haig Whisky product for the American market and was bottled at the slightly higher strength of 43% ABV.

Aged predominately in first fill ex-bourbon casks, with a small amount of the spirit aged in Oloroso sherry butts, it’s reminiscent of an unpeated, muscular Highland Scotch.
